I'm Stefano Scarfalloto, but everyone calls me Scarfa. Pizza e Sfizi was born from my great love for the restaurant business and my desire to challenge myself to create something authentic. Every morning, when I knead my pizza dough, I follow my mantras: passion that can be felt in every gesture, continuous pursuit of perfection, and above all, ingredients that are little treasures. I choose each ingredient as if I had to bring it to my own family table. The mozzarella that stretches, the tomato that smells of sunshine, the flour that tells stories of golden wheat. I work each dough with the respect it deserves, because I know that every pizza carries within it the essence of what composes it. When I see my customers bite into that first steaming slice, with the crust that crunches and the toppings that blend perfectly, I know I've hit the mark.
